Serious Jam Making Withdrawal

Good News/Bad News

The Good, well great news is that HuneyBee is getting a lot of requests for jam. The bad news is that I am out of just about everything! I need fresh fruit NOW! Strawberries should be ripe and ready within the next couple of months, followed by glorious blueberries...then peaches :)
I'll have to learn to freeze fresh fruit better so I will be able to make Jam all season long. I have started researching the freeze process now....don't want anymore BROWN peaches..........thank you very much!

The Cranberry-Orange jelly came out fantastic!!! I will try to make up another batch very soon. I had put in extra pectin, but I don't think it needed quite as much

Cranberry Orange

Finally!! A few minutes with NOTHING that means, Time to make JELLY!
I am going to try my own special recipe of Cranberry Orange jelly....heres to hoping that the elusive orange will allow for a set!

Jammin' Craft Fair

The Craft Fair was a great success!!! There was even a USURPER there.... Some one had the NERVE to sell jam there too ( humph )....but in spite of that I sold 20 jars, which was very nice considering the crowd was mostly residents from the home..... I love those folks

I am really looking forward to March when the strawberries start to come out, I am in need of fresh fruitas!!

In the meantime I will continue my quest of conquering the Orange jelly dilemna

Craft Fair

My very first craft fair will be tomorrow! I have prepared a variety of 37 jar of jams and jellies... I had a bit of a "Lucy" moment when I took labels off of a few jars and somehow got them all mixed up and couldn't tell the double berry from the double berry tequila and the pineapple mango from the pineapple peach....jeeze

Mmmmmmm Mimosa

What do you do with fresh oranges and champagne?? Why make mimosa......jelly that is.
With my day off I made mimosa jelly and with the left over champagne I made a fantastic sparkling grape jelly

The only problem is...the mimosa does not seem to be setting. Just like the elusive Tequila Sunrise jelly! What's the deal!!?? This orange juice is starting to get on my nerves! I used fresh valencia oranges that I squeezed and 2 pouches of liquid pectin. Maybe i should try dry pectin?

On the other hand the Sparkling Grape is looking good good good!

Jam Withdrawal

My day jobs sure do interfer with IMPORTANT stuff, like making jam and jelly....It's been days and days since I was able to stir in that big pot of mine! and I am working tonight too


So far I am off next weekend, so hopefully I will be able to experiment with making the Appletini Jelly
