Mmmmmmm Mimosa

What do you do with fresh oranges and champagne?? Why make mimosa......jelly that is.
With my day off I made mimosa jelly and with the left over champagne I made a fantastic sparkling grape jelly

The only problem is...the mimosa does not seem to be setting. Just like the elusive Tequila Sunrise jelly! What's the deal!!?? This orange juice is starting to get on my nerves! I used fresh valencia oranges that I squeezed and 2 pouches of liquid pectin. Maybe i should try dry pectin?

On the other hand the Sparkling Grape is looking good good good!
